Matt, now I found it: It seems that your printer is not a PostScript printer but system-config-printer has assigned the PPD file for its bigger Brother (which is a PostScript printer) to it.
This printer is not supported by the standard Ubuntu installation. You need to get the Epson driver as described on http://ubuntuforums.org/showthread.php?t=973233.
