If I declare the printer on the Mac as an Epson DX-4800, then I get
correct colors again.

(DX-7000F is not available with this old version of CUPS on the macs.)

What really puzzles me is that it used to work with "Generic Postscript
Printer" on the Macs for a very long time. That's why I did not really
look for a solution on that side. Again, it stopped working after an
upgrade on the _Linux_ side that implied cups and other printing
packages.

Also, I don't understand the principle: isn't a cups server supposed to
publish a printer as some generic PostScript device, doing all the real
conversions to the printer's output format? I had been explained that
this is the main difference with Windows printing system, where you need
to have the drivers installed on all the printing clients.
