Very strange one. Always cool when someone fixes their own problems :-) I added a French layout, and L+R Shift as the next layout shortcut (all from within the system settings "Text Entry" and "Keyboard" panes, not using IBus) and everything still worked OK for me. Then again, I'm using an older Ubuntu, GNOME fallback/classic (hate Unity) and all in a VirtualBox VM under Windows 8. Any number of things could be the mysterious trigger for this.
