OK so it might NOT be gnome-related. I've had a few of these crashes using Unity now. Attached is syslog that I was able to get after connecting an HDMI monitor via the external Dell usb-3.1 adaptor which exposes an HDMI port.
Luckily ? while this did crash it didn't kill the machine, so I got the logs.
