Additional. I got my hands on a different brand of headphones (Anker) to see if the manufacturer was the issue.
I still have the same problem. TL;DR: Clean install of Eoan, bluetooth pairs then bluetooth restarts, over and over. Sometimes, I'm lucky and it will stay connected. Most of the time it restarts.
