The mysql-server-8.0 package Pre-Depends on mysql-common package which
contains the missing script:

 /var/lib/dpkg/info/mysql-server-8.0.postinst: line 191: /usr/share
/mysql-common/configure-symlinks: No such file or directory

Checking the dpkg and apt log files you provided I can't see any mention
to mysql-common, so for some reason it was not installed and the upgrade
failed. Could you please try to install mysql-common and then try to
upgrade mysql-server-8.0?

Since it seems likely to me that this is not a bug in Ubuntu, I am
marking this bug as 'Incomplete'.

However, if you believe that this is really a bug in Ubuntu, then we would
be grateful if you would provide a more complete description of the problem
with steps to reproduce, explain why you believe this is a bug in Ubuntu
rather than a problem specific to your system, and then change the bug
status back to "New".

  during the upgrade from 18.04 to 20.04 this happend: package mysql-
  server-8.0 (not installed) failed to install/upgrade: installed mysql-
  server-8.0 package post-installation script subprocess returned error
  exit status 127
