Thanks for the quick response here! Downgrading should be possible. However, do have in mind that for new installations, docker.io now (v29) uses the containerd storage, so downgrading a fresh docker.io installation could be trickier.
So, instead of going through the trouble of changing your staging environment to fetch a package from a different series, would you be willing to test the new docker package once it hits the -proposed pocket (or from a PPA)? To do that, you would need to subscribe to https://bugs.launchpad.net/ubuntu/+source/docker.io-app/+bug/2127661 and wait for the announcements there.
