Similar issue here:

$ sudo timedatectl set-timezone Europe/Bratislava
$ date
Mon Feb  2 12:55:19 CET 2026

Date shows the correct time 12:55, but the GNOME clock in the gnome-
panel clock shows 11:55 (one hour less than my current local time)

After
$ sudo timedatectl set-timezone Europe/Prague

$ date
Mon Feb  2 12:57:34 CET 2026

And GNOME clock in gnome-panel also shows 12:57.

$ sudo timedatectl set-timezone Europe/Prague
jr@jPC:~$ date
Mon Feb  2 12:57:34 CET 2026
jr@jPC:~$ timedatectl
               Local time: Mon 2026-02-02 12:58:31 CET
           Universal time: Mon 2026-02-02 11:58:31 UTC
                 RTC time: Mon 2026-02-02 11:58:31
                Time zone: Europe/Prague (CET, +0100)
System clock synchronized: yes
              NTP service: active
          RTC in local TZ: no
jr@jPC:~$ sudo timedatectl set-timezone Europe/Bratislava
jr@jPC:~$ timedatectl
               Local time: Mon 2026-02-02 12:58:56 CET
           Universal time: Mon 2026-02-02 11:58:56 UTC
                 RTC time: Mon 2026-02-02 11:58:57
                Time zone: Europe/Bratislava (CET, +0100)
System clock synchronized: yes
              NTP service: active
          RTC in local TZ: no

i.e. timedatectl output for Bratislava and Prague seems to be the same,
but the time displayed in GNOME clock in the gnome-panel on top (the
clock in the top of the screen) is incorrect (on hour less) for
Bratislava.
