I´m not sure if this is what you are looking for, but JFugue is a really nice 
music framework for the Java programming language. If you have basic 
programming skills, take a look at the tutorial. Basically, it allows you to 
program your music, in different sequences and channels. It´s like an easy 
programming interface for midi, very suited for generative music.

I haven´t tried it on ubuntustudio, but, since it´s Java, it should work.
