I haven't done anything with udig since 1.0.2 on Mac OS X. I grabbed 1.0.5 and the new Apple Java 5 update.

udig won't quit.  This error appears in the console:

Unhandled event loop exception
Reason:
Provider org.apache.xerces.jaxp.DocumentBuilderFactoryImpl not found

So I can't verify if the project-save-then-restart-udig problem from back then is fixed.

I never used it for a long session, so I can't say anything about the slowdown issue.

One other problem with the Mac distribution: the zip includes the udig.app package, which has the support plugins, configuration and features folders built into it (which are the ones that are used), AND the zip includes a duplicate of the configuration, features and plugins folders alongside the udig.app. This totals to a whopping 58MB download, instead of the 30MB it should be.

Basically the Max OS/X update is out, and appears to fix the problems we were having.
