I seem to have fixed my own problem, so apologies if I wasted anyones time.
There were some source files missing from my SDK - I'm not at all sure
how they got lost,
but when I compared the src tree I was trying to use with the windows
version, there
were parts missing. So I unzipped the linux src again and the missing
parts were
there. So I just put them back and now everything seems to be working.

*net.refractions.udig.project.ui* but it doesn't show up in the list
generated for adding required plugins.
I don't know where to look next to see whats wrong.
