There's probably a little more to it than the WMS server bring "problematic". Note that the request is 1704 pixels wide. A fair assumption is that many WMS servers cap out at 1024 pixels. Mapserver caps out at 2048 (in a default compile). Basically, for reliability, uDig is going to have to start using the tiling WMS renderer and restricting request sizes to less than 1024.

I've just tried uDig 1.1RC1 and the development trunk and both were able to view the WMS you provided. MInd you I am on a Macintosh right now. I'll get a linux user to try it out. Are you sure you are using the Java JRE provided with the application? If a different java is being used the Image IO plugin might not be used which could cause your error. I assume that you are on a normal x86 linux box?
