We currently don't have an Italian translation, but would be very happy
to see one added.
There are 2 steps to adding a translation:
1. The user-interface (uDig itself)
2. The help pages
We have a wiki page with some instructions:

If anyone is willing to spend some time translating, we would ensure
that the changes get into the repository very quickly and included in
the next release.
