I have to agree with Andrea Aime on this one. It sound like you have
to wait for Geotools trunk or make a release that uses Geotools 2.3
because there are fewer API changes so it should work with uDIg 1.1
almost directly.
The Geotiff support on both of those geotools branches are really
good. I believe I've fixed the issue with rendering the image but it
still will load the entire thing into memory so that step will take a
little while and you'll need a lot of RAM.

Hmm... I guess you'll have to wait for the uDig release that will
use geotools trunk. The improvements there are massive, we can
easily explore geotiffs of 2GB (with embedded overviews).
