In principle the help is there for me. And I didn't have any previous uDig 
installations on this machine.

To reproduce:
- Start with clean workspace
- Create a new, empty map (this step seems important for reproducing the issue!)
- Click on the map.
- In File menu, select import -> Data -> Files
- Select three shp files in the same directory.
  I chose the usual testdata I one downloaded from SVN:
  bc_2m_border.shp, bc_2m_lakes.shp, bc_2m_rivers.shp
-> Only one entry shows up in catalog.#
Clicking on it and pressing "Del" shows up the other two.

Note. This does not happen if you choose Import with no map open (right after 
uDIg start).

Yes, 3005 works for me as well.
I chose 32610 (WGS 84 UTM zone 10 N) which I always use for BC data. This fails 
although I am looking on a part of BC only ... where the CRS is well defined.

Am I doing something stupid?

I mean the legend map graphics. It shows raster images, but only sometimes.

F.e. right now I have a sandwich map of "clouds", "bc_border" and "earthlights" 
(in this order)

The legend lists clouds and bc_border only.
