Pat's suggestion is a good one - one disk now, and another later for backup. Alternatively, 500GB SATA drives are only ~$100 now so get a couple now and either mirror them (RAID1) or use them separately with one for backup. Or get a large internal drive plus a USB external drive for backup (so you can take it "off-site". Personally, I've got 8x500GB SATA drives in a RAID6 setup, but then I've got a lot of music and DVDs/video, etc!
