I run Ubuntu desktop 8.04 on my laptop.  I upgraded to it since it
first came out.  Since then, there have been 4, maybe 5 kernel updates.
So it's probably these that have caused your system to reboot.

I think your idea is good - since it is a server, disable the automatic
update feature and perform it manually.
