IMO you shouldn't run X11 with so little memory. X11 is a pig, and
anything with gnome in its name is its older brother... Networking
takes up memory, SC does too and transcoding might come in too. 128 MB
is plenty enough for a headless linux when not running a large app, but
SC+Mysql happen to be a large app.

As Ramage just said (as I type), you can run web services + ssh and
that should be well enough. You don't need to remove X11 (which will
probably go bad, at least with a Desktop Ubuntu setup, due to
dependencies everywhere), simply remove it from the standard runlevel.
If you need it for some specific purpose, then you can login via ssh
and "init X", where X would be a specific runlevel where the GUI is
enabled.

In the same manner, you can drop all the services you don't need,
including Apache (SC is its own webserver, not ?), print server (cups),
mail server (you need mail client, ~ a lightweight server
configuration), nfs, samba (you're using a client, you don't need samba
server), afp; etc.
