I believe SC is up and running fine, but is not playing nice with the symlinks. A quick way to diagnose the symlinks would be to create another directory somewhere on local storage and put a few music files in it. Then, remove the symlinks you made to NAS and put a new one to the local directory with the few files, and see if SC will scan those files using the symlink. If so, then you know the problem lies with the NAS mount and not the symlinks themselves.
