I had both problems on my 9500 in X. The stuttering was from the ATA/66 card, a known bug. Acard and Sonnet have an updater to fix that problem. its an OS-9 patch but it carries over when you restart in X.
I too had the sound loss when I ran iTunes v2 or v3. The problem disappeared with version 4.0 of iTunes along with the latest QuickTime upgrade.
