It will be slow, but that system will run OS X perfectly well, depending, of course, on what you're doing with it. Run mail.app, Safari and other light apps, yeah, just fine. It'll bog down really quickly trying to run iMovie, though.
We have a similar system (it's got a 300 mhz processor, but only 256 megs of ram) at work as our in-house OSX test box.
Be sure you get OSX 10.2, considerable performance increases were made between 10.1 and 10.2.
Investing in a processor upgrade is a good idea, and fast G3's or even G4's aren't too out of line. I have a 466mhz G4 from OWC in mine, and am quite pleased with it. Just be sure to get something like Powerlogix Cache Controller X if you get a G4, to turn on and tune the backside cache.
Debian+MOL is in no way, shape, or form a substitute for a real Mac OS...
