You could set up a symbolic link[1], but why not just change the location of
your iTunes music folder in iTunes preferences (under Advanced)?

  [1] Move the folder then Open up Terminal.app and type
      "ln -s /Volumes/OtherDrive/Music Music" to create a symbolic
      link (similar to an alias, but at a lower level).
