Right, but what happens is that your eye tricks you and you skip a tile inadvertently or use the same one twice. In Boggle, words are only valid if the tiles touch consecutively, and you can only use a particular tile once per word. So it's easy to use the same "e" twice, or to skip a tile to get to an "e".

Don't believe everything you (think) you see.
