Ok, I understand this a bit better now, but one thing still confuses
me. How does it know that the Menubar group is a Menubar group and
not some other group with button in it?
I understand I can create as many Menubars as are needed and hide/
show them etc. But how does it know which one to use? What if there
is more than one visible Menubar?

On Win, a menu bar is IN the window: as many menu bars as there are
windows (same or not).
On Mac there is a SINGLE menu bar at the top of the screen and, of
course, it's useful to be able to associate it with the top window.
As you have read it, it's the reason why menubar and defaultmenubar
properties are Mac ONLY.
According to the guide lines, menu names and contents should not
change FOR the same window, on Win or Mac.
On the other hand, you can enable/disable, check mark, etc. any
item in a menu at mouseDown to take the current environment into
account.
That's what guide lines allow.
But if you 'really' want to display different menu bars in the same
window when running Windows, just create as many menu bars as
needed and show/hide the right corresponding group according to
your needs.
But I repeat: this is not compliant with Win guide lines :-)
And the user might be confused.
