So, as to you questions: Re 1. Yes, there are others designs that might suit your needs better such as shared database-shared design or even shared database-separate schema. Unfortunately, these variants are not implemented in current feature set of OFBiz, but I might be mistaken. Re 2. As these variants are not implemented (again, I might be mistaken) you won't find any implementation guideline or documentation at the OFBiz site. But googling might help you find what you need.
