OK, I'm not a lawyer, not even close. But I did a search on the Apache.org
and the only reference for capitalization of Apache in official policy that
I came across was from a document that was marked obsolete and marked
superceded in 2009 - last decade... So I looked in the new replacement
trademark documentation and saw that Apache was only spelled with an
uppercase A in the document, including usage examples. However the
statement that "Apache must be uppercase A" was not there, and I have to
assume that it was explicitly removed, rather than accidentally omitted.

If we need an official call, that's apache-legal, right St.Ack? Is it
worth it to worry about that? I saw that Steve's earlier question there
hasn't gotten any responses, and I hate to bring up something this trivial
for no good reason...
