I've used Clonezilla. It's handy for imaging new machines from a master machine (I'm working for someone doing that right now) but otherwise it's rather tedious and is rather aimed at getting data from an arbitrary machine to another over a network, its core strength. It'll image multiple machines at once, too.

I suggested Clonezilla because I've used it several times to move a working system over to a new, larger disk. There are, of course, many different ways to do this, and the best one is the one that works for you.
