For headless server administration, the admin typically just SSH into the box and administers from the command line. That's because servers usually lack the GUI packages, and admins are usually adept at the command line. If you want a remote desktop, and you have a machine that provides a GUI or desktop, then I believe VLC server or RealVNC is what you are looking for.
