As with so many things in life this is not a black vs white issue.
Many technologies intended to do good can and do get use for bad ends.

Used for its intended purpose the MitM proxy is a powerful security device.
As you rightly point out when used for evil purposes it's terrible.

If you work for a company that uses a MitM proxy to protect the business
you will be required to use it.
