I've done this with roundcube using system users (not virtual users).
I did not find a single guide. That would be nearly impossible as there
are so many different kinds of configurations. You will have to piece
many different guides together and read through documentation. And a lot
of the configuration will be OS dependent (I use Debian). There are
"email in a box" solutions like https://www.iredmail.org that may save
you a lot of time if you aren't interested in setting up a server from
scratch.
You will find that some services will likely have your AWS server on
their block list (AT&T and ProofPoint are two services) I frequently
have issues with. So you will need to request to be removed from their
blocklist. Also, check your AWS IP address for blocklists here:
