mvn clean install will do much of the trick for you (deleting everything under target, and building a 'standard' jar out of your project).
If you want a different jar, you have to change the maven-jar-plugin configuration. If you want a more subtle bundling of your project (a jar including dependencies, or source, a zip including documentation, or whatever), you have to go to the maven-assembly-plugin (binding it to the install phase is considered good practice).
