This sounds like font problems, What fonts are you using for your documents ? Are you haveing problems with all of your documents or only specific ones ? Doe sthis happen with any other applications ? What version of OpenOffice.org are you using ? ( 1.1.4 is the latest and can be downloaded form http://download.openoffice.org/1.1.4/ ).
