Press F11. In the Stylist Dialog double click the "Header 1" style. If you can't find it select "All Styles" from the drop down box at the bottom of the stylist. Once you've used a style in your document it will appear in the toolbar. To apply new styles you'll have to use the Stylist. I'm really not sure whether this is the solution to you problem, but try framing your question in a better manner next time.
