In some applications (like Adobe Life Cycle Desgner) this is known as the "pattern".


Click:
Format
Cell
Number

Type in or copy and paste the following in the format code field:

[<=9999999]###-####;\(###") "###-####


You can then edit the comment from "user defined" to "Phone Number" and reuse the format in later spreadsheets.
