It might actually be easier to find the one that is opening, and edit the 
styles, bus since I have one that I do like already, I thought I would merely 
change the pre-selection.

The methods I listed above will open Writer with the template you have set as default. Are you sure you correctly changed the template you want used as default? The instructions that you were given are correct. To check, with OOo open go to File/New/Text Document. Is the new document opened using the same template as opened by default or your new selection of default template? If they are the same you haven't correctly changed the default template.

Since you are automatically opening OOo on system startup, it is possible you are opening a specific document instead of the Writer default. Check what is listed under System Preferences/System/Accounts/Login Items.
It should be "OpenOffice.org"
