This is found under File > Changes. You can find some information
in Help. Open Help (F1 key), click the Index tab, and enter changes
in the Search term box. You might want to look at several of the
sublistings under Changes.

several manuals on OpenOffice.org. The Writer Guide may help much
more in how to use this feature.
