I know it should be a simple matter to turn this function off, but I have looked and turned off what seems to be appropriate, but it is still doing it, and I would be very much obliged if you (or anyone else on this list) could point me in the right direction to turn this feature off.

As has already been suggested, the way to turn this off generally is to remove the tick from Tools | Cell Contents > | AutoInput.

But - if you wish to keep this facility generally - there is also a way to disable this on the fly. The suggested automatic input occurs only if you press Enter (or click on the green Accept tick) to confirm the edit whilst the suggestion is displayed. To avoid this, just press Esc before Enter (or tick).
