AFAIK, yes, the camel-ftp is used to access the remote ftp server, it's client 
side.

The camel-jetty can play the role both as client and server.

About your question, "camel-jetty can replace an actual jetty server?"

It depend on how you use jetty, and I believe with camel-jetty, the http based 
operation is available, but you probably can't expect to use camel-jetty as a 
full functionality servlet container.
