Hey Zongo,
This issue is not even related to SOGo. Fix your underlying components
before even testing SOGo.
It's not by putting pressure on list members to get help not related to
SOGo that you'll get any. It might just get you out of it if you continue.

You need to cehck the followings:
- Mail logs (included separated dovecot log)
- Mail queue
Find error messages, and write them to us.

we are not using dovecot, we are using cyrus-imapd instead.
Here is theoutput of the log after sending an email
