This sounds like one of those cases where Linux with Mozilla and
OpenOffice can do everything you need, but may not be the "best"
choice: all the functionality is there, but you may get complaints
from users because it's not what they're used to.

(For the sake of completeness: if your email is on an Exchange server,
and you need more than just POP access, then Mozilla isn't enough,
you'll need to throw in something like Evolution + Ximian Connector.)

With that said, if I were setting up such an arrangement, I'd probably
use Red Hat 8, but with KDE instead of the default Gnome.  You'll find
quite a few people here that would use other distributions, though, so
take this for exactly what it's worth -- which is probably about what
you paid for it :)
