In general, you can find what you're looking for with apt-cache. For
example:
apt-cache search hex
That will return a lot of results, so pipe them through grep:
apt-cache search hex | grep edit
Then get package descriptions with apt-cache too:
apt-cache show hexedit
You can get an idea of which software is the most popular at
freshmeat.
