I have 512MB RAM and 512MB of swap.  I've only run out
of RAM and swap space a couple of times.  (Bug or
memory leak in the XINE front end I use)

Other than that, I have never used any swap space, and
that is running Apache 2.0, MySQL 4.1, and a couple of
other programs in the background while working.
