Export the catalog to a single raster. There's an option for that somewhere...

I put them in a catalog b/c I thought it would make it easier to process than mosaicking into a mega raster, or doing individual zonal stats on each raster. But zonal stats won't let me select the catalog as my value raster. Any ideas?
