I am able to get a copy of Leopard Server as well. Is it possible to
run though? I can uninstall it from one of my computers, thus freeing
up the license as needed.

Read the licensing conditions defined by Apple and you'll realize
that you're not allowed to do this. Only OSX server may be installed
inside a VM (and still only on Apple hardware).
