I am able to get a copy of Leopard Server as well. Is it possible to run though? I can uninstall it from one of my computers, thus freeing up the license as needed.

That's work in progress. Apple assumes a different type of BIOS (EFI) and also expects certain "hardware" devices to be in place a normal PC doesn't have. Don't know when it'll be finished, but when it's done it'll certainly be mentioned prominently.

Read the licensing conditions defined by Apple and you'll realize that you're not allowed to do this. Only OSX server may be installed inside a VM (and still only on Apple hardware).
