Viscosity???  Viscosity of what??

No problem with an up eye or down eye if you tie a turle knot because it cinches down behind the bend and this in itself provides extra security. Are you still tying your hooks on with the improved clinch? If so, ring eyed hooks (straight) are the way to go, but this has an inherent disadvantage in that the improved cinch knot has to be centered for the fly to be presented properly. Sometimes the knot slides around the hook eye and becomes off-centre (that's how we spell centre in Canada) making for poor presentation.

Full marks go to Byard for correctly referring to the distance between the hook shank and the point, as the gape rather than the gap.

I prefer a straight eye hook most of the time.

I agree Byard.  It would seem that the angle/viscosity/attaching to tippet would all be affected.
