Place in heavy pan 1 kg of damsons + juice and zest of
2 lemons, add water to almost cover the fruit, bring to
the boil then simmer, crushing fruit occasionally, till
all the fruit is very soft and pulpy.

I must taste your recipe.  My hab jelly is actually stolen from my fishing buddy.  His recipes include smoked steelies, hab jelly, hot dilly beans, wax peppers stuffed with cabbage and plenty of sugar.  My recipes are mostly Italian sauces, chile sauces, marinated steaks on the grill, and pickles.
