 I fish for Rockfish on the Pacific Coast, thought I KNOW they are not the same fish species(The West Coast Rcokfish are members of the SEBASTES Genus, with about 100 different members..) However I understand the problem you are facing.

 First off, It seems to me you are using too Much Rabbit strip in your fly. Even if you drown it completely before fishing, it will not sink fast...even with that 1 oz. of weight you mentioned using. Try subsitituting other materials for various parts: Yarns or Chenilles for the body, Pearl Diamond Braid for the body. Or go with a shorter Wing/Tail of the Rabbit Strip.you might also try CAREFULLY cutting the Rabbit/Zonker strip down so it is abit narrower in the cross width.

 Most all my Rockfish Patterns are up to 8 inches total length, & the "Rabbit Strip" patterns I fish for the Rockfish never go past 6 inches total length. I find that when I cut back on the overall length of the fly, I can Bulk up the pattern & it will still get noticed by the Rockfish.

 The Patterns I favour for Rockfish include: Lefty's Decievers, Clousers, Jetty Junkies,"Rabbit Strip" flies, Various Squid patterns & my own JETTY RIPPER.

 Just change the colour theme to white or the Cream you mentioned & I'll bet it will produce for you.

 a Final thought, what sink rate is your Fly Line??? I use 250 gr. shooting heads all the way to LC-13 heads to bomb my pastterns down to the reefs & deep in the Kelp forests....
