Cut a shallow V at the head you will be fine.

I read about a good bunny hair pattern today that I haven't tried out yet,
but looks real good.

Take a fur strip about 2 inches long, and fold the two ends in to the
middle.  Fold this in half.  The skin is just to give you something to hold
onto at this point.  Place the skin over the eye of the hook, and tie in the
hair only - not the skin - around the shaft of the hook.  Trim away the
skin, Finish up the head with thread.  

No skin on the beast at all, just hair flowing around the hook.
