Yorkshire Pudding
4 oz plain flour, pinch of salt, 4 fluid oz milk at room temp, 4 fluid oz milk at room temp, 1 large egg at room temp, 1 tbsp beef fat taken from the beef roast pan.
Sift flour + salt into bowl. mix egg milk water together and gradually whisk into flour and mix till smooth. leave to stand for at least 30-40 mins.
Put the fat into a 9 inch square 2 inch deep baking tin and place in oven to melt the fat, it must be very hot before the batter is added
re-whisk the batter and remove the tin with very hot fat from over and pour batter immediatly into fat and return to center of oven and bake at 220 degC-440 degF for 35 minutes. DO NOT OPEN THE OVEN DOOR during first 20 minutes cooking time
serve into portions and with roast meat
